Having a cupcake for breakfast can be a very good idea especially if you are someone who loves and enjoys the taste of sugar in your mouth to give you a bright day.
Today, I would like to share with you some tips on how you can be able to prepare delicious cupcakes for breakfast.
Ingredients.
-1 ripe banana(mashed)
-1 egg
-2 tablespoons of honey or maple syrup(optional)
-A cup of milk
-1 tablespoon of vanilla extract.
-1 cup of rolled oats.
- A half tablespoon of baking powder
-A quarter tablespoon of cinnamon
-A pinch of salt.
Procedure.
1.Preheat the oven to 180°c.
2.Mash the banana in a mixing bowl until smooth.
3.Add egg, milk, honey or maple syrup and then mix well.
4.Stir in oats, baking powder,cinnamon and salt
5.Fold any extras like nuts or chocolate chips if you are using them.
6.Scoop batter into lined or greased cupcake tins or muffin which is about half full.
7.Bake for about 18 to 22 minutes or until a tooth pick comes out clean.
8.Allow the cupcakes to cool for sometime before eating. These cupcakes are great while warm or even cold.
Additional tips:-
-You can serve the cupcakes with yorghurt or spread peanut butter to add extra protein.
-You could also make a batch and then store the extra in a fridge for about 3 to 4 days.
