HOW TO PREPARE DELICIOUS CHICKEN TIKKA WITH SPICY RICE

 If you are organizing a family and friends reunion or meeting and would love to prepare a recipe that is simple and very delicious that will be appreciated by your loved ones.

In this recipe, the chicken is marinated in a spicy yorghurt mixture and it is usually cooked over the coal so that it can give it the delicious smoky flavour.

 This recipe of barbeque is very common in Kenya and you cannot fail to have one in a restaurant. This chicken tikka will be paired with rice to add more flavour to the meal.

Ingredients

For the chicken Tikka you will need:-

-1 tablespoon of ginger-garlic paste

-1 tablespoon chilli powder

-1 tablespoon of cumin powder

- A pinch of orange food colouring

- A half tablespoon of turmeric powder

-1 tablespoon of oil

-1 tablespoon of paprika

-A quarter a cup of natural yoghurt

-A cup of chopped green bell pepper

-3 pieces of chicken legs

- Salt for the taste

Method

1. Mix the yoghurt, chilli powder, ginger-garlic paste, turmeric powder, cumin powder, salt, orange food colouring, pepper and also lemon juice together. Add the chicken pieces before mixing it well and then you can allow it to marinate in the fridge for about an hour or just throughout the night.

2.  Put the chicken pieces on the barbeque and then allow it to cook for about 12 to 15 minutes on each of it's sides. Make use of the oven if you desire and then allow it to cook for about 35 to 40 minutes at a teperature of about 190 degrees centigrade.

3. Heat oil in a pot that will be used to prepare the spicy rice and then add the bell peppers to it before stiring it up. Now add the cooked rice, paprika, salr and also the cumin powder and then stir it until the heat has been able to penetrate through it.

4. Lastly, serve the rice alongside the chicken tikka and add some kachumbari on the side.
