HOW TO PREPARE LEMON MANDAZIS WHICH ARE DELICIOUS AND LOVELY

One of the most popular snacks in Africa is called Mandazi and it is eaten all over the continent. This snack is found in almost each and every restaurant around any location in the region.

It can also be found by the road side too and it can be eaten for breakfast with tea.

This kind of lemon Mandazi will bring in new flavours that are totally different from the normal mandazi that can be found everywhere.

Ingredients

- 2 tablespoons of baking powder

-  A quarter tablespoon of salt

- 2 tablespoon of blue band margarine

-4 tablespoons of sugar

-Oil used for deep frying

- 2 lemon zests

-2 tablespoons of Vanilla essence

- Half a cup of warm water

- 2 tablespoons of baking powder

-2 cups of all purpose flour

Method

1. Sift the flour, baking powder and the salt using a sieve in a bowl.

2. Add margarine in the same bowl and then use a fork to mix it up in the flour just until it has started resembling bread crumbs.

3. Add vanilla essence, sugar, the lemon zest and water into it.  Mix them up until the flour has all come together.

4. Pour out the dough on a clean working surface and then start kneading it using your palms. You can add more flour when the dough feels sticky or even add a little more water when it is too hard and dry. Knead the dough for about 10 to 15 minutes.

5. Cover up the dough with a damp cloth and then allow it to rest for about 15 to 20 minutes.

6. Divide up the dough into four parts using a knife to cut it lengthwise and also across just to form the different portions.

7. Roll up each portion of the dough into a rough shape of thickness which is about half  a centimeter. Cut up the rounds to form the four mandazi.

8. Heat up the oil that will be used for deep fryinging and then you can use a wooden spoon to test if it has heated up well. When you put the back of the wooden spoon into th oil, the oil should form a bubble right away. Put the dough into the oil and then make sure that you deep fry it until it has turned brown on both sides.

9. Serve the mandazi with a cup of tea and enjoy.
