HOW TO PREPARE RICE AND COCONUT PANCAKES

 If you love having pancakes for breakfast, then i bet you will also enjoy having chocolate pancakes for breakfast alongside some well cooked rice.

These pancakes which are commonly known as Vibibi are prepared using coconut butter, you could also be in position to use rice flour if you feel lazy to soak the rice in water over night.

Ingredients
 
- 2 cups of rice

-A cup of caster sugar

-A cup of light Coconut milk

- A cup of heavy  Coconut milk

-An egg

- 2 tablespoons of all purpose flour

-1 tablespoon of Cardamom powder

-1 tablespoon of yeast

- Cooking Oil

Method


1. Start by washing the rice and then soaking it in 3 cups of water  for about four plus hours or for a whole night. Ensure that you do soak the rice over night so that the rice becomes very soft and it is easy to blend with the butter.

2. Now drain the water and then add the rice into a blender. Pour half of the heavy  coconut milk, caster sugar and then start blending it. Blend the mixture for about 5 to 10 minutes until the rice has been able to blend with the butter.

3. Now add the heavy coconut milk that has been left, light coconut milk, egg and also cinamon powder, yeast and also the flour and then blend it for about a minute.

4.  In a large bowl, pour the butter and then cover it with a cling film and then allow it to sit on a warm place for about 2 to 3 hours.

5.  Start stiring the mixture and then scoop it using a laddle. Add a tablespoon of oil into the pan and heat it. Now pour the butter into the centre of the pan before covering it with a lid.

 Allow it to cook for about a minute until the top of the pancake has turned dry. Remove the lid and then add a tablespoon of oil onto the pancakes.

6. Flip the pancakes and then allow them to cook for about 30 seconds.

7. Serve the pancakes alongside with yoghurt, fruits or even just a cup of tea.
