HOW TO COOK SWAHILI FISH WITH COCONUT RICE

 The true origin of this dish called Swahili fish with Coconut rice is not known as some people claim that it actually originated from Zanzibar while others say it was dreamt up from Kenya.

But nevertheless, the dish is very tasty and enjoyable.

Today i would like to give you some of the tips on how you can be able to cook swahili fish with Coconut rice.

Ingredients
 
- 2 tablespoons of cooking oil

-one chopped medium onion

- 2 table spoons of ginger garlic paste

-2 chopped tomatoes

-1 tablespoon of currypowder

- one cup of Coconut milk

- 2 fillet tilapia fish that has been cut into 8 pieces

- Chopped coriander leaves

- A cup boiled rice that has been washed and soaked.

-1 tablespoon of Turmeric powder

Method

 
1. In a pot, heat some oil and add some onions before stiring. Allow it to cook for 1 to 2 minutes or until the onions have turned brown. Add ginger-garlic paste and then stir it for s short period of time.

2. Add currypowder, tomatoes and turmeric powder and then start stiring it. Now add some salt and allow it to cook for 4 to 5 minutes until the tomatoes have become soft.

3. Pour some coconut milk and tamarind and then sprinkle some coriander leaves that have been chopped and allow it to simmer for 3 to 4 minutes.

4. Put the tilapia fish onto the curry and then cover the pot with a lid and allow it to simmer for 6 to 8 minutes until the fish has been properly cooked.

5. Add some parboiled rice, light coconut milk and some heavy coconut milk. Allow it to boil for sometime and then reduce the flame before covering it with a lid. Allow it to simmer for 12 to 15 minutes.

6.  Serve the swahili fish that has been cooked alongside the creamy coconut rice in the shell of coconut that has been used.
