HOW TO PREPARE OR COOK DELICIOUS GOAT PILAU IN THE KENYAN WAY

 If you enjoy having pilau for lunch or dinner then you will enjoy this lovely recipe from Kenya called goat pilau.

The best thing about this recipe is that it is prepared using tender goat meat that has been spiced up with rice.

This kind of dish is commonly cooked by women who reside in the coastal regions of Kenya and it is not hard to make and it is one of the dishes that you can be able to prepare very often at home.

Ingredients
 
- 500grams of Goat meat which has been cut into pieces

-1 tablespoon of minced Ginger

-1 tablespoon of Blue band Margarine

- Salt for providing the taste.

-4 tablespoons of Oil

-1 tablespoon of cumin seeds

-4 to 5 cadamoms

-4 to 5 cloves

- 6 to 8 Black Pepper

-2 bay leaves

-4 large sliced Onions

-1 tablespoon of minced Garlic

-1 table spoon of minced ginger

- 1 tablespoon of finely chopped green chillies

-4 potatoes that have been cut into 2 inch cubes

- 1 tablespoon turmeric powder

- 2 cups of Daawati rice that have been soaked in water for about 30 minutes.

- Chopped Coriander leaves

Procedure to be followed 

 
1. Add the meat, ginger, garlic, margarine and even some salt in a pot. Then add enough water to cover the meat fully.

Allow the meat to boil for about 2 to 3 hours or just pressure cook for 25 minutes. When the water starts reducing quickly, add more water so that you prevent it from drying up.

2. Use a sieve to separate the meat from the stock when the meat has become tender but ensure that you do not throw away the stock.

3. Heat oil and margarine in a  large pot and then add the cumin seeds, cardamoms, cloves, cinammon, bay leaves and also black pepper corns.Toss it around for 1 to 2 minutes.

4. Add the onions and then stir. Allow it to cook for about 10 minutes or until it has been able to turn golden brown.

 Ensure that you allow them to cook for that long so that they can be able to turn golden brown. This is what will give the pilau it's colour and will also add a completely different layer of flavour onto it.

5. Add garlic,green chillies and ginger and then allow it to cook for about 1 to 2 minutes.

6. Add the boiled meat, potatoes, turmeric powder and  salt and then stir it properly. Pour 3 cups of stock into it and then allow it to boil for about 15 minutes.

7.  Now add the rice and then stir it properly. Sprinkle some coriaander leaves on the top of the stock and then allow it to boil. Once it has boiled, reduce the heat and then cover the pot with a lid and then allow it to simmer for about 18 to 20 minutes.

8. Serve it on the side with a Kachumbari and then enjoy.
