HOW TO COOK A WHOLE FRIED FISH IN A TOMATO PEANUT BUTTER SAUCE

If you love fish, you will love a crispy whole fried fish that has been dipped in a sauce. I enjoy having whole fried fish that has been dipped in sauce.

- 2 tablespoon of lemon juice

-1 large chopped onion

- 1 tablespoon of tomato paste

-1 cup of water

- Oil to be used for deep frying.

- A half tablespoon of turmeric powder

- chopped coriander leaves.

- 1 tablespoon of  smooth Peanut butter

- Salt for the taste.

Method 

 
1. Mix together chilli powder, ginger-garlic paste, lemon juice,turmeric powder and salt  in a small bowl.

2. The mixture should be rubbed into the slits of fish and then all over the fish on both sides.  Set it aside and then allow it to marinate for 10 minutes.

3. Deep fry the fish on either side for 8 to 10 minutes until it has become crispy or the way you love it and then put it aside.

4. Heat some oil in a pan and then add the onions and allow them to cook until they have turned translucent.

5. Add the Coriander leaves and the tomato paste and stir it for one minute. Add the salt and the tomatoes and then allow it to cook for 5 minutes or until the tomatoes have been softened.

6. Lastly, add water and the peanut butter, start stiring it and then allow it to cook for 10 minutes. Add some more water when the sauce has become too thick.

7. Put the fried fish in the pan and then cover it with the sauce. Allow it to simmer for 2 to 3 minutes before taking off the flame. Serve the fried fish with Ugali and some greens as side dish.
