HOW TO COOK KENYAN BEEF STEW AND UGALI

If you love beef and Ugali then you will most likely enjoy a dish called classic Kenyan beef stew and ugali all in one.

This method that iam going to illustrate will result in a beautifully cooked meat that is tender  but if you buy meat that is hard, you will need to first boil it before you can be able to add it to the pot.

Ingredients
 
- 2 tablespoons of Oil

-1 chopped Onion

- 1 tablespoon of minced garlic

-1 tablespoon of curry powder

-500 grams of beef cubes

-1 beef stock

- Salt for the taste

- Freshly ground black pepper

-3 sliced tomatoes

- 3 cups of water

- chopped coriander leaves

- 2  Unga wa Dola  Maize meal

Procedure to be followed

 
1. Heat oil in a pot which has a heavy base and then add onions and stir it properly  Cook it for about 30 seconds or until has become translucent.

2. Add garlic and curry powder and then stir it properly. Add the beef cubes with the stock cubes, water, salt, pepper and tomatoes. Stir it well.

3. The pot should now be covered with lid and allowed to simmer for 30 to 40 minutes. Garnish with coriander leaves  and then you can set it aside and start preparing Ugali.

4. Boil water in a pot or saucepan that will be used to prepare the Ugali. Add a cup of maize meal to the boiling water. Add a little bit of the meal to water until the water starts to roar and this makes the Ugali to be perfect. Stir it using the wooden spatula and try breaking up the lumps that have formed apart.

5. Add the flour that has remained and then continue stiring it.

6. Smooth out the lumps that have formed using the spatula.When the Ugali is not hard enough, add more flour. Reduce the heat and then continue working the Ugali against the sides of the pot while ensuring that you get rid of the lumps and also make sure that it cooks uniformly.

7. Mould the ugali with the spatula when it has cooked and then serve it alongside with the beef stew to enjoy.
