1. Sieve the plain flour and baking powder in a bowl and then whisk the flour until the baking powder has been fully incorporated into it.
2. Add cardamom powder and sugar the whisk it again until both have also been incorporated.
3. Whisk the margarine into the milk and then pour the milk into the flour continue whisking it until it has formed a dough of dropping consistency.
4. Whisk the eggs into it and then cover the bowl with a cling film and allow it to rest for about an hour.
5. Heat the oil while ensuring that it is not too hot since it will brown the mandazi quickly and it will not cook well on the inside.
6. In order to make the perfect round balls, first dip a tea spoon into oil and then take some butter into your fist and then squeeze it until the butter has come out as a round shape between your thumb and also your index finger. Use the teaspoon to scoop the butter out and then drop it into the oil.
7. Fry the mandazi for 2 minutes while ensuring that you are tossing them around so that they brown evenly. Remove the madazi and place it onto a paper towel so that the excess oil is drained.
8. Lastly, serve the mandazi with a hot cup of tea.
