HOW TO COOK GITHERI,THE KENYAN STAPLE FOOD

One of the best known staple foods in Kenya is called Githeri and it is actually a favourite for some close friends of mine hailing from this East African country.

This is a simple dish that is usually prepared using maize and beans and in this recipe added some peanut butter to give it a sweet taste from the usual Githeri.

Ingredients

 
- 1 large chopped onion

- 1 cup of chopped tomatoes

- 3 tablespoons of oil

-1 tablespoon of peanut butter

-Salt to taste

- Chopped Coriander leaves

- 2 cups of water

Method
 
1. In a pot, heat some oil and then add the onions and allow it to cook until it is translucent.

2. Add the tomatoes and allow them to cook for about 1 minute and then add the peanut butter, pour a cup of water and then stir it and allow it to cook for about 4 to 5 minutes.

3. Now add the maize that has been boiled alongside the beans, add salt for the taste and a cup of water, stir it and cover the pot with a lid and allow it to cook for 10 to 15 minutes.

4. Garnish the food with coriander leaves and then serve.
