If you have ever been to Kenya you will discover and find out that people in Kenya love having coconut in their meals and they always do spice up their meals with coconut.
In this recipe that iam going to present to you, you will find out that grilled chicken can also be spiced up with coconut cream and this will end up creating an amazing marinade for the grilled chicken.
Here is how you will prepare this delicious recipe for yourself and others.
Ingredients
- 2 tablespoons of Oil
-1 tablespoon of turmeric powder
-1 tablespoon of Currypowder
-2 cups of water
- Salt for the taste
- Roasted Cashew nuts
- Coriander leaves with their stems
- 2 cloves of garlic
- One lemon Juice
- Black pepper that has been freshly ground
- 2 pieces of Chicken legs that have been attached to their thighs.
- 3 tablespoons of Coconut cream
- 3 pieces of green chillies
Method
1. Heat some oil in a pan and then add some turmeric powder and curry powder and then stir it for a few seconds. Now add the rice and mix it up with the spices before seasoning it with pepper and salt. Add some water to the rice also.
2. Allow the water to boil and then reduce the temperature, now cover the pan with a lid and allow it to simmer for 12 to 15 minutes. After it has been cooked, start stiring it in the cashew nuts for some time and then put it aside.
3. Blend together the coriander leaves alongside the stems,garlic, green chillies , salt, lemon juice, salt, pepper,oil and coconut cream.
4. Use a spoon to scoop the marinade and pour it over the chicken and you could also make a few deep cuts of about 1cm into the chicken so that the marinade can go through it and add flavour to it in a beautiful way.
You can also decide to toss the chicken inside the marinade and then you can leave it in the refridgerator throughout the night.
5. Bake the chicken in a preheated oven at a temmperature of 180C for about 35 minutes or until it has lost it's pink colour inside.
6. Serve while still warm on a bed of the yellow rice that has been prepared.
