HOW TO PREPARE A DELICIOUS MEAL OF EGG CURRY FOR BREAKFAST

 If you enjoy having eggs for breakfast then you will love this recipe that you can prepare and have for that special and memorable breakfast.

 This recipe can be prepared in less than 35 minutes and it can be served alongside rice or even some bread. You can prepare this for dinner or lunch.'

Ingredients

- 8 boiled eggs  that have  been deskilled.

-3 tablespoons of oil

-1 table spoon of cumin seeds

-1 chopped large onion

- 1 tablespoon of chopped ginger

-1 tablespoon of tomato paste

-1 tablespoon of chilli powder

- 1 tablespoon of turmeric powder

- A half cup of coconut milk

- Chopped coriander leaves

- 3 minced garlic cloves

- 2 cups of chopped tomatoes

- Salt to taste

- Serve with Steamed Rice.

Method

1. In a heavy based pot, add oil and then heat it. Add the cumin seeds into the pot and then allow it to crawl. Now add the ginger, onions, garlic and then allow it to cook.

2. Add the chilli powder, tomato paste, cumin corianderpowder and also the turmeric powder and the stir the mixture.

3. Add the salt and the tomatoes before stiring. Now cover the pot with a lid and then allow it to cook for 10 minutes or until the oil has started oozing out. Add the coconut milk and water, cover and then allow it to cook for 15 to 20 minutes.

4. Add the coriander leaves and the boiled eggs and allow the heat to pass through them bu turning the flame on for some time. Serve the eggs with some steamed rice.
