If you live in Uganda you must have most likely come across dish called Luwombo which is loved very much by people who reside in the central region of Uganda.
There is no good occasion out there like weddings or introduction where this dish called Luwombo misses out.
Luwombo dish is in most cases prepared with whole meat but not ground or minced meat but today i would like to show you that it is actually very possible to prepare Luwombo with minced meat and then add on the groundnut sauce and mushrooms.
Here is how you can also be able to prepare this delicious local dish loved by the Ugandan people with a different touch to it using minced beef.
Ingredients
- 200 grams of minced groundnuts
-100 grams of mushrooms
-300 grams of ground beef
-2 beef stock cubes
- 1 tablespoon of powdered ginger
-1 cured Luwombo leaf that has it's rope for fastening
- Diced bell pepper
- Salt and Black pepper to provide the taste
-1 tablespoon of Paprika
-2 minced cloves of garlic
-1 diced small carrot
- 2 diced medium sized onions
Method
1. Boil the groundnuts along with the beef stock and some onions, add salt to it and allow it to boil for 10 to 15 minutes. Make sure that you have poured enough water that they will need to to be cooked.
2. Season the minced beef with some salt and pepper before stiring it alongside ginger, garlic and some onions in oil for 5 to 10 minutes.
3. Put the Luwombo leaf into a big bowl or saucepan and then pour the groundnuts into it and then add the beef and the other remaining ingredients onto it.
4. Wrap the leaf properly making sure that there is no any leakage and then tie it up with the banana fibre strap.
5. Put the wrapped Luwombo into a steaming saucepan that is to be used and cover it with a lid so that it retains a large amount of the steam just like the way you would steam matooke. Allow it to cook for 1 to 2 hours before it is ready to be served.
6. Serve the Luwombo with matooke, rice or any other dry food that you would like to enjoy it with.
